Ingredients
For Quinoa Salad
- 1 cup quinoa (yields 3 cups when cooked)
- 3/4 cup pomegranate seeds
- 1 medium cucumber, diced
- 1 yellow pepper, diced
- 1 apple, diced
For Lemon Basil Vinaigrette
- 5 basil leaves, finely chopped
- 1 clove garlic, minced
- 1/2 tablespoon vinegar
- 1 tablespoon honey or maple syrup
- 2 tablespoons lemon juice
- 1/2 cup olive oil
- 1/2 teaspoon pepper
- Salt to taste
Directions
For Lemon Basil Vinaigrette
- Add crushed or finely chopped basil and garlic to a bowl and whisk well until combined.
For Quinoa Salad
- Cook the quinoa according to package instructions and let it cool completely.
- Add the cooled quinoa, pomegranate seeds, cucumber, yellow pepper, and apple to a large bowl.
- Toss with the vinaigrette and adjust salt and pepper to taste. Serve fresh!
Notes
If you're familiar with cooking quinoa, try substituting apple juice for water to add a sweet touch to the dish.
