Quinoa Salad with Pomegranate and Lemon Basil Vinaigrette

Ingredients

For Quinoa Salad

  • 1 cup quinoa (yields 3 cups when cooked)
  • 3/4 cup pomegranate seeds
  • 1 medium cucumber, diced
  • 1 yellow pepper, diced
  • 1 apple, diced

For Lemon Basil Vinaigrette

  • 5 basil leaves, finely chopped
  • 1 clove garlic, minced
  • 1/2 tablespoon vinegar
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons lemon juice
  • 1/2 cup olive oil
  • 1/2 teaspoon pepper
  • Salt to taste

Directions

For Lemon Basil Vinaigrette

  1. Add crushed or finely chopped basil and garlic to a bowl and whisk well until combined.

For Quinoa Salad

  1. Cook the quinoa according to package instructions and let it cool completely.
  2. Add the cooled quinoa, pomegranate seeds, cucumber, yellow pepper, and apple to a large bowl.
  3. Toss with the vinaigrette and adjust salt and pepper to taste. Serve fresh!

Notes

If you're familiar with cooking quinoa, try substituting apple juice for water to add a sweet touch to the dish.
