Ingredients
For Quinoa Salad
1 cup Quinoa (Yields 3 cups when cooked)
3/4 cup pomegranate seeds
1 medium cucumber, diced
1 yellow pepper, diced
1 apple, diced
For Lemon Basil Vinaigrette
5 Basil leaves
1 clove garlic
1/2 tablespoon vinegar
1 tablespoon honey or maple syrup
2 tablespoons lemon juice
1/2 cup olive oil
1/2 teaspoon pepper
Salt to taste
Directions
For Lemon Basil Vinaigrette
- Add crushed or finely chopped basil and garlic to a bowl and whisk well until combined.
For Quinoa Salad
- Cook the Quinoa as per package instructions. Let it cool completely.
- Add the quinoa and salad ingredients to a bowl. Add the vinaigrette and lightly toss to combine.
- Adjust the salt, pepper, and dressing as per your taste.

If you’re already familiar with quinoa, try cooking it in apple juice for added flavor
