For Quinoa Salad

1 cup Quinoa (Yields 3 cups when cooked)

3/4 cup pomegranate seeds

1 medium cucumber, diced

1 yellow pepper, diced

1 apple, diced

For Lemon Basil Vinaigrette

5 Basil leaves

1 clove garlic

1/2 tablespoon vinegar

1 tablespoon honey or maple syrup

2 tablespoons lemon juice

1/2 cup olive oil

1/2 teaspoon pepper

Salt to taste



For Lemon Basil Vinaigrette

  1. Add crushed or finely chopped basil and garlic to a bowl and whisk well until combined.

For Quinoa Salad

  1. Cook the Quinoa as per package instructions. Let it cool completely.
  2. Add the quinoa and salad ingredients to a bowl. Add the vinaigrette and lightly toss to combine.
  3. Adjust the salt, pepper, and dressing as per your taste.



If you’re already familiar with quinoa, try cooking it in apple juice for added flavor
